As inspiration for starting my blog I did some research by reading lots of blogs, while trying not to get intimidated by all the amazing graphics, photography and clever writing. Let’s face it, I’ve joined the blogosphere just a tad on the late side. There are some really great blogs out there, most of which are written by people half my age!!
I discovered and am now a big fan of Sheri Silver and her blog, donuts, dresses and dirt. A few weeks ago, Sheri posted a recipe for a very simple peach salad that quickly became a favorite in our house. I think I’ve already made it three or four times. It works equally well as a side dish with grilled fish, or as a light lunch accompanied by some roasted turkey or leftover BBQ chicken.
And better yet, this recipe has just a few ingredients, so very little organizing is required.
Peach, Basil and Red Onion Salad
adapted from Martha Stewart Living
3 peaches, sliced 1/2″ thick
1/4 red onion, thinly sliced
1/3 c. fresh basil leaves, cut in a “chiffonade” (I used this gorgeous purple basil but any variety will do)
Juice of 1/2 lemon
1 T. extra-virgin olive oil
coarse salt and pepper
Gently toss all ingredients in a serving bowl. Season generously with salt and pepper.
